Ingredients:
For the pulled jackfruit -
- 1 tablespoon olive oil
- 1 red onion, diced
- 1 red pepper, diced
- 1 clove garlic, crushed
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 2 tablespoons chipotle paste
- 2 tablespoons tomato puree
- Juice of 1 lemon
- Salt & black pepper
- Cooked brown rice
- Kidney beans
- Sweetcorn
- Spinach leaves
- Red chilli, sliced
- Spring onion, sliced
- Loving Foods Hot ’N’ Smoky Kimchi
- Heat the oil in a pan and add the red onion, pepper and garlic and cook for 8-10 minutes until softened.
- Add the smoked paprika, cumin, chipotle paste and tomato puree and continue cooking for a few more minutes.
- Shred the drained jackfruit and add to the pan with the lemon juice and salt and pepper. Cook for another 5 minutes until heated through.
