Mexican Bean Wraps

Prep time; 20 minutes
Cooking time: 5 minutes
Ingredients:
- 2 spring onions
- 4 large tomatoes, chopped
- 1 green pepper, diced
- 1 x can kidney beans, drained
- 1 x small can sweetcorn, drained
- 1 red chilli, diced
- 2 tablespoons tomato puree
- 1 teaspoon smoked paprika
- 1 teaspoon mixed herbs
- Pinch of black pepper
- Wraps
- Loving Foods Organic Fermented Spicy Cortido
- Mix together all of the ingredients for the bean filling in a bowl and leave in the fridge for 30 minutes to allow the flavours to absorb and merge together.
- When ready to serve, heat up the wraps according to instructions then spoon some of the bean filling into each, with a generous serving of Spicy Cordito. Enjoy!
